Recipe: Easy Homemade bread

I’ve been telling myself that I should take more shortcuts, stop obsessing about couponing and order takeout food more often. But it melts my tired heart when my kids tell me that I’m the “best cooker” and I do want to feed them the healthiest food possible. However, this past week, I think I went too far. You see, I decided that my family deserved freshly baked bread, free from preservatives, glucose/fructose and large amounts of salt. For a working mom, this should have been a no-brainer: go buy a bread maker, toss in the ingredients, turn it on and go to bed. But no…in typical Cheapo fashion, I decided not to invest in another fancy kitchen appliance and I went searching on the Internet for a bread recipe. I found a fairly simple one on Ricardo Larrivée’s website and gave it a shot. The fourth time was the charm, because after making several loaves of bread that looked like bricks, this was the finished product:

The whole family was involved in making this successful loaf, taking turns mixing, kneading and inspecting the dough. Bread making is cheap Family Day entertainment!

Cheapo’s Easy Homemade Bread (Adapted from Ricardo’s Easy Sandwich Bread)

1 tbsp sugar
1.5 cups warm water
2 tsp instant yeast
4.5 cups all purpose white flour + extra for kneading if necessary
1 tsp salt

Preparation
1. Butter a standard size loaf pan. I use a piece of the butter wrapper to grease the pan.
2. In the cup containing the warm water, add the sugar and stir to dissolve.
3. In a large mixing bowl, combine the flour, yeast and salt. Add the water and sugar mixture. Mix it up until a ball of dough forms. Add more flour if you need to. It should not be wet and sticky.
4. Knead the dough for about 10 minutes, flouring the surface as required. Shape it into a log and put it in the loaf pan.
5. Turn on the oven to 400° F for 1 minute only. Turn off the oven.
6. Put the pan in the middle of the oven along with a baking dish filled with water.
7. Let the dough rise until doubled, approximately 45 minutes. (Note: Do not let it stand longer, because it will not rise more. Instead, it will end up falling. Yes, I discovered this the hard way.)
8. Remove the pan and pre-heat the oven to 350° F. Bake until golden brown, about 45 minutes.
9. Put the hot loaf of bread on a cooling rack and resist the urge to eat it until after it has cooled off.

    I’ve been making alot more bread lately as it’s much cheaper to make than buy. I’m not talking about the sliced white type bread I’m talking loaves of bread that are filled with olives or baps like I made yesterday. Can’t beat it! Thanks for sharing.
